3. FOOD & NON-FOOD CONTACT SURFACES CLEANABLE, PROPERLY DESIGNED, CONSTRUCTED & USED: Observed electrical tape on door of small cold hold unit in front prep area. instructed person in charge to remove and repair with proper gasket.
4. NON-FOOD/FOOD CONTACT SURFACES CLEAN: Observed bottom of three door cooler with food debris and water build up. instructed person in charge to clean and maintain.
5. PHYSICAL FACILITIES INSTALLED, MAINTAINED & CLEAN: Observed items stored on floor in basement (crates/boxes). instructed person in charge to maintain all items at least six inches from floor at all times.
