PROPER COLD HOLDING TEMPERATURES: Found the following tcs foods stored inside the rear walk-in cooler (wic) at improper temperatures: ham, chicken, turkey, soup, salami, cheese, sliced tomatoes, meatballs, tuna, roast beef, pepperoni, 2. PROPER COOLING METHODS USED; ADEQUATE EQUIPMENT FOR TEMPERATURE CONTROL: Found the rear walk in cooler not able to hold the required temperature of 41f or lower. ambient temperature was 49.0f per metal stem thermometer and thermometer on the outside of the cooler. instruct 3. INSECTS, RODENTS, & ANIMALS NOT PRESENT: Found a fly strip hanging in the rear prep area. instructed to remove fly strip and refrain from hanging strips in prep areas. maintain same. 4. FOOD & NON-FOOD CONTACT SURFACES CLEANABLE, PROPERLY DESIGNED, CONSTRUCTED & USED: Found the rear slicer's attached cutting board with deep, dark grooves and stains. instructed to sand or replace cutting board to maintain a smooth and easily cleanable surface. 5. PLUMBING INSTALLED; PROPER BACKFLOW DEVICES: Found the front hand-washing sink leaking from the pipe underneath it. instructed to fix leak and maintain good plumbing.
