CONTAMINATION PREVENTED DURING FOOD PREPARATION, STORAGE & DISPLAY: Observed two sheet trays of french toast sticks, not covered on speed rack in prep area. instructed to keep covered to prevent from potential source of contamination. 3. UTENSILS, EQUIPMENT & LINENS: PROPERLY STORED, DRIED, & HANDLED: Observed the bowls and strainer not inverted on the rack next to the three compartment sink. instructed to invert and maintain.
