PROPER COLD HOLDING TEMPERATURES: Observed the following cold tcs foods at improper temperatures stored inside display cooler in grocery during time of inspection approximately 90lbs total of the following items lbs of variety cooked 3. PROPER COOLING METHODS USED; ADEQUATE EQUIPMENT FOR TEMPERATURE CONTROL: Observed display cooling unit located in grocery storing tcs foods (various breakfast sausage, bacon and ready to eat foods) at improper temperature. noted unit @ 55f during time of inspection. instru 4. THERMOMETERS PROVIDED & ACCURATE: Observed multiple cooling units (dairy, sourcream, cheese, deli meats, breakfast sausages, bacon, salsas and guacamole) etc in grocery without thermometers inside. instructed to provide and maintain. 5.
