UTENSILS, EQUIPMENT & LINENS: PROPERLY STORED, DRIED, & HANDLED: Observed ramen bowls stored on shelving units improperly. instructed to invert said bowls to prevent possible contamination. 2. FOOD & NON-FOOD CONTACT SURFACES CLEANABLE, PROPERLY DESIGNED, CONSTRUCTED & USED: Observed prep table shelving located in prep and dishwashing area with rust build up. instructed to resurface and maintain smooth and easily cleanable surfaces. 3. WAREWASHING FACILITIES: INSTALLED, MAINTAINED & USED; TEST STRIPS: Observed large pastry equipment located in front prep area used for dough preparation. insructed to provide and maintain alternative wash, rinse and sanitizing procedures for said equipment. 4. PHYSICAL FACILITIES INSTALLED, MAINTAINED & CLEAN: Observed organic debris build up underneath low temp dish machine equipment on floors. instructed to remove in order to prevent pest harborage.
