FOUND COOKED AND COOLED TEMPERATURE CONTROL FOR SAFETY FOODS (GRILLED CHICKEN, COOKED BURGERS, RIB TIPS) NOT PROPERLY DATED, STORED LONGER THAN 24 HOURS IN COOLERS ON SITE. INSTRUCTED TO PROVIDE PROPER DATE MARKING WITH DISPOSITION DATE FOR RTE FOODS PREPARED ON SITE AND HELD OVER 24 HOURS IN COLD HOLDING UNIT. ITEMS WERE DATED AT THIS TIME. PRIORITY FOUNDATION VIOLATION 7-38-005, CITATION ISSUED | 48. WAREWASHING FACILITIES: INSTALLED, MAINTAINED & USED; TEST STRIPS - Comments: OBSERVED NO CHEMICAL TEST STRIP KIT ON-SITE FOR EITHER OF THE SANITIZERS USED FOR SANITIZING DISHWARE AND FOOD SURFACES. INSTRUCTED TO HAVE A TEST STRIP KIT (NEED BOTH CHLORINE AND QUATERNARY STRIPS) ON SITE AT ALL TIMES TO MONITOR THE STRENGTH OF THE SANITIZER PROPERLY. BOTH CHLORINE AND QUATERNARY CHEMICAL SANITIZERS ARE USED. PRIORITY FOUNDATION 7-38-005, CITATION ISSUED | 49.
