Observed a cook assembling a sandwich by grabbing Bread, sliced tomatoes, cheese and lettuce with bare hands. Instructed manager not to handle ready-to-eat foods with bare hands. Priority volitation 7-38-010. | 49. NON-FOOD/FOOD CONTACT SURFACES CLEAN - Comments: Shelves cooking equipment through facility not clean, food debris and grease build-up noted. Instructed to clean and maintain. | 55. PHYSICAL FACILITIES INSTALLED, MAINTAINED & CLEAN - Comments: Nylon sheets covering sections in prep kitchen ceiling, card board used as a barrier between 3-comp and rear storage. Instructed to provide proper surfaces and maintain.
