3. NON-FOOD/FOOD CONTACT SURFACES CLEAN: Found the interior of the fryers and ovens in the prep area with dirt, grease, food and debris. instructed to clean and maintain cooking equipment.
4. PLUMBING INSTALLED; PROPER BACKFLOW DEVICES: Found the sanitizer compartment of the 3-compartment sink clogged and draining slowly. instructed to fix sink and maintain good plumbing.
5. PHYSICAL FACILITIES INSTALLED, MAINTAINED & CLEAN: Found the floors in the corners, under storage racks and under/around heavy equipment with dirt and debris in the dish washing, prep area and in the basement. instructed to clean and maintain floors.
