2. IN-USE UTENSILS: PROPERLY STORED: Observed spoon handle laying on top of cooked ground beef. instructed manager to provide long handle dispensing utensils to prevent contamination.
3. UTENSILS, EQUIPMENT & LINENS: PROPERLY STORED, DRIED, & HANDLED: Observed multi-use knives stored behind electrical equipment in rear prep area. instructed manager to rewash, rinse, sanitize and store knives in sanitary manner
4. WAREWASHING FACILITIES: INSTALLED, MAINTAINED & USED; TEST STRIPS: Observed no drainboard on 3-compartment sink. instructed manager to provide drainboard for proper air drying of food equipment and utensils.
5. NON-FOOD/FOOD CONTACT SURFACES CLEAN: Observed food spills and debris on interior and exterior surfaces of cooking equipment, dust buildup on shelves, coolers, freezers behind front counter and in salles area. instructed manager to clean
