1. THERMOMETERS PROVIDED & ACCURATE: Visible and working thermometer needed in the 2-door prep cooler and upright tall refrigerator. must provide and maintain at all times.
2. FOOD & NON-FOOD CONTACT SURFACES CLEANABLE, PROPERLY DESIGNED, CONSTRUCTED & USED: Observed foil being used as a liner for cooking equipment in food preparation area. instructed person in charge to remove foil and ensure all nonfood- contact surfaces remain smooth and easily cleanab
3. PHYSICAL FACILITIES INSTALLED, MAINTAINED & CLEAN: Observed water damaged ceiling tile above 3-compartment sink. must repair/replace and maintain at all times.
4. ALL FOOD EMPLOYEES HAVE FOOD HANDLER TRAINING: Observed no employees food handling training certificates on premises. instructed management to provide proof of food handling training for all the required employees.
