1. WIPING CLOTHS: PROPERLY USED & STORED: Found wiping cloths not properly stored when not in use. instructed to store in sanitizing solution (sanitizer must be at the required ppm) when not in use. maintain same.
2. PLUMBING INSTALLED; PROPER BACKFLOW DEVICES: Found a leak at the base of the cold water knob on the 3-compartment sink. instructed to fix leak and maintain good plumbing.
3. ADEQUATE VENTILATION & LIGHTING; DESIGNATED AREAS USED: Found the filters on the ventilation hood with dirt, grease and dust build up. instructed to clean and maintain filters.
4. ALLERGEN TRAINING AS REQUIRED: Found no proof of allergen training on site. instructed to meet requirement for city of chicago food service sanitation managers.
