1. FOOD PROPERLY LABELED; ORIGINAL CONTAINER: Observed no labels for bulk storage containers (flour and sugar). instructed to label with common food name.
2. WIPING CLOTHS: PROPERLY USED & STORED: Observed wet wiping cloths on several prep area surfaces. instructed to store properly in a sanitizing solution between usage.
3. IN-USE UTENSILS: PROPERLY STORED: Observed in-use utensils (ice scooper) stored improperly directly on ice in ice bin. instructed to store properly between usage.
4. FOOD & NON-FOOD CONTACT SURFACES CLEANABLE, PROPERLY DESIGNED, CONSTRUCTED & USED: Observed milk crates being used as shelving in storage area. instructed to provide shelving that is 6" from the floor.
5. ALLERGEN TRAINING AS REQUIRED: Observed city of chicago food service sanitation manager on duty without proof of allergen training. instructed to provide documentation.
