1. APPROVED THAWING METHODS USED: 3-501.13: observed improper thawing method for tcs foods. found frozen food items in the rinse basin of the three-compartment sink with no running water. instructed to use proper thawing methods.
2. PERSONAL CLEANLINESS: 2-402.11: food handler observed with no hair restraint at the time of the inspection. instructed all food handlers to wear hair restraints while in prep areas.
