Violations on last inspection

1. APPROVED THAWING METHODS USED: Observed chitteling being thawed out in a dishtub in the dishwashing area. instucted manager on proper thawing in the cooler and/or under cool running water.
2. INSECTS, RODENTS, & ANIMALS NOT PRESENT: Observed a gap along bottom of front doors and opening at the rear exit door. instructed to seal so that doors are completely rodent proofed.
3. NON-FOOD/FOOD CONTACT SURFACES CLEAN: Instructed to clean and maintain the following: exterior surfaces of all cooking equipment (stoves, fryers, grill, steamtables, hot holding cabinets), bottoms of prep tables in kitchen, storage shelve
4. PLUMBING INSTALLED; PROPER BACKFLOW DEVICES: Observed the 3 comp sink with multiple leaks at the faucet and sprayer, also noted the knobs at the hand sink in the dish washing area loose. must repair and maintain.
5. PHYSICAL FACILITIES INSTALLED, MAINTAINED & CLEAN: Floors through out need detail cleaning along the wall base and in corners to remove spills, debris and/or grease.
